The key to drawing rave reviews on your Italian recipes is
"to have a preparation edge". When we first began exploring Italian cooking many
years ago, we found most of the recipes bland. In watching thousands of Italian
cooking shows over those same years, we discovered that most of the recipes
featured were remarkably similar from show to show. Now this is okay, maybe, if
we are talking original and traditional Italian recipes (the way Mama or Grandma
or Papa used to make). But, many are pretty boring. So, in juicing up Italian
recipes to better suit our tastes, we discovered some variations that, not only
we, but also many of our friends, loved and raved over. Sometimes a little
different is better, we discovered, (ala our unique
tiramisu recipe
listed under desserts).
Spaghetti, for
another example: we've tried a myriad of different combinations over those years
(more than Aletha and Dave care to count, really). And, presented here at New
Italian Recipes, resides one that is a bit different, but it's also truly
delicious, especially if made with fresh ingredients such as ripe, in-season
tomatoes, (or from a really good brand of canned tomatoes that were processed at
the height of the season and grown in a good tomato region [Southern Italy, for
example]).

A Bit of Bacon
Store packages of sliced bacon in the freezer. When a recipe calls for a small amount of bacon, just use a serrated knife to cut off what's needed. Then just refreeze the remaing bacon for next time you need a bit. .
