Pretty much a perfect week, as far as we're concerned.
We like meat loaf, can you tell? What's not to like? And if
you have a good recipe, maybe an Italian gourmet meat loaf recipe,
well that is just about heaven, huh?
As with spaghetti, osso buco, Caesar dressing, chicken
cacciatore and many other popular recipes, Dave has been on a quest for
years to produce a really gourmet Italian meat loaf. After a multitude of
efforts, the following recipe is where we are on this right now. The quest
will continue, of course, but this is a pretty good one for now.
Feast on the meat loaf right after it comes out of the oven.
Then, the next day, slice off a thick slab of the leftovers, slop on a
little ketchup, put it all between two slices of potato bread, and you've
got a finger lickin' good lunch!

Italian meat Loaf
Spice Mix:
1 T of each:
Oregano, dry mustard, thyme, garlic powder, onion powder, basil and freshly
ground black pepper. Mix it all together.
Meat Loaf Ingredients:
2 lbs. lean hamburger or turkey
1 can Diced Tomatoes or equivalent amount of
homemade tomato sauce.
2 eggs, beaten
1 onion, diced
3 slices of bread, crumbled. (I use Italian bread crumbs usually. You can
also use left over
homemade Italian croutons, and crush them yourself.
1/4 cup ketchup or chili sauce
1-2 tablespoons horseradish
1 tablespoon Dijon mustard
Dash or two of Tabasco
3 tablespoons Worcestershire sauce
Topping:
1/4 c reduced (see note)
homemade tomato sauce
1/4 c bottled grocery store chili sauce
1/3 c cheddar cheese, (or any of your favorite Italian cheeses).
Mix the ketchup and tomato sauce. You'll sprinkle the cheese
over the sauce.
(Note: For this recipe, we often put the tomato sauce in a sauce pan, add
about 1 T of lemon juice, 2 T Worcestershire sauce, and about 1/4 cup of
brandy.
Reduce this into a near paste, and you’ll really intensify the flavor of the
tomato sauce.)
Preparation Of The Meat Loaf:
Preheat oven to 350 degrees.
Mix all of the ingredients, except the topping, in a large
mixing bowl.
Then, place the mixture into a large bread pan and spread it
evenly into a loaf.
Bake for about 1 hour., then drain off the excess liquid and
"ice" it with the topping.
Bake about 15 more minutes, or until the cheese is toasted,
and you'll be in for a gourmet treat.
This is almost too easy to be this good. I can put this dish
together in about ten minutes. And, left over Italian meat loaf sandwiches,
YUM!
